Spinach Salad

Today we propose several recipes of spinach salad to help you regulate the intestinal transit.  With this recipe we are going to help you, since the spinach salad in addition to providing vitamin K, B9 and A, among others, provides fiber that will help you regulate intestinal transit. Mushrooms in addition to fiber, have significant amounts of high quality protein (2% – 4%). This characteristic has earned them the title of “vegetable protein” or “vegetal meat”. In addition the pine nuts provide an extra fiber and unsaturated fats of excellent quality, which help you balance the appetite and keep cholesterol at bay.


1 bag of spinach, 3 or 4 large and very smooth mushrooms and 50 g of pine nuts.

Dressing: 1 spoon mustard, half squeezed lemon and 4 tablespoon olive oil.

Preparation :

Arrange the spinach in a fountain, cut the mushrooms into sheets and form a crown above the spinach. Dora the sprockets and throw them over. Emulsify the dressing, mixing in the order indicated in the ingredients.

This recipe is ideal for our Cohers, in the induction stage, as the satiety index of the mushrooms is one of the highest known. You can complete this recipe with baked or grilled whole wheat croutons.

Spinach, cherry and tofu salad

  • 300 g tofu
  • 400 g mushrooms
  • 12 cherry tomatoes
  • 1 bunch of spinach, watercress or canons
  • 2 cloves garlic
  • 4 tablespoons soy sauce
  • % 0 g extra virgin olive oil and vinegar for dressing
  • Salt and black pepper


Put the soy sauce in a bowl, dice the tofu and insert it for at least half an hour. If it is not covered, see it with the sauce or stirring it to absorb the flavors. Clean the canons, clean and cut into quarters the mushrooms, peel and mince the garlic and wash the cherry tomatoes. Put a little oil in a large frying pan and fry the mushrooms.
